Homecooked & Healthy Hamburger Beef Stroganoff

I LOVE making comfort foods healthy. This recipe is the perfect example of that. No “cream of” soups (aka chemicals), wheat noodles, and lower-fat meat. One of my husband’s favorites. Here’s how to make it!

Ingredients:

-1 lb lean ground beef (93/7 or 88/12 are great options)

-1 bag of whole wheat egg noodles

-2 T flour

-.5 T beef bouillon

-1 c water (if you have beef broth, use that in place of the water + beef boullion; I prefer the bouillon because it adds more flavor)

-1 chopped Vidalia onion (use any kind you’d like, but I like these because they’re sweeter and less “onion-y”

-8 oz chopped cremini mushrooms (optional, we don’t use these)

-1 T Smart Balance with Flax Oil Butter

-1 T garlic powder

-1 T Worcestershire Sauce (sometimes more, base on your tastes)

-1/4 c low fat sour cream

-1/4 c PLAIN Greek yogurt

-seasoning salt and pepper

Directions:

Cook the ground beef on medium to medium-low in a skillet sprayed with olive oil cooking spray. Season with seasoning salt as you go, judging by taste (do not add too much! Dish will have more sodium added throughout, so be conservative with it.) Set aside, drain any grease.

In the meantime, boil noodles in a separate pot of water until al dente. Drain and set aside.

Using the same pan, add 1 T butter and if you choose to use the onions and/or mushrooms, heat a skillet and cook these until onions are translucent/mushrooms have been seared.

Add in the cooked beef to the pan of onions and/or mushrooms, stir in garlic powder and 2 T flour, cook until uniformly mixed.

Add in the Worcestershire sauce, Aminos, and broth (or bouillon/water combo). Add a bit of salt and pepper to taste. Stir until heated through, turn off the heat once heated through. Add in sour cream and Greek yogurt. Top with a dollop of sour cream. Serve over egg noodles.

*Notes: You can always adjust the carbs by using less of the egg noodles, and adjust sodium by using less of the seasoning salt/boullion/Worcestershire sauce. Add more protein by topping with plain greek yogurt instead of sour cream! There are so many edits you can make to this recipe, reach out if you have any questions!
