High Fiber/High Protein Chocolate Chip Pumpkin Muffins

These muffins are too good! My kids love it when I make them for after school snacks, which is a wonderful time for them to eat them because these muffins seem like a treat, but actually provide whole grains, fiber, and protein to keep them full longer and helps to keep their blood sugar more steady throughout the next couple of hours.

There are two ways to make these muffins—there is a bit of a shortcut, or you can make them completely from scratch. Either way, they do not take long to make.

Ingredients with the box (shortcut method):

-Miss Jones Pumpkin Bread/Muffin Mix (1 bag)

-2 eggs

-3/4 c oil (I use olive, but you can use safflower, canola, avocado, etc.)

-3/4 c water

-2 T Bob’s Red Mill Ground Flaxseed

-1 scoop vanilla ice cream flavored Optimum Nutrition

-1 c chocolate chips

Directions: Mix the muffin mix, water, eggs, and oil together, fold in the flaxseed and protein. Once uniform, add the chocolate chips. You can get creative here and not use the chips, or add walnuts, some type of dried fruit, etc. Up to you!

-Bake on 350 degrees Fahrenheit for 18-20 minutes.

Homemade Chocolate Chip Pumpkin Muffins

(Homeade from Scratch)

-1.5 c King’s Gluten Free All Purpose Flour

-1 tsp vanilla extract

-1 tsp baking soda

-1 tsp baking powder

-3 eggs

-1 tsp cinnamon

-1 tsp pumpkin pie spice

-1/2 c butter or oil (I love using Kerrygold, Smart Balance with Flaxseed and vitamin D added, or olive/safflower oils)

-1/2 c Truvia sugar

-1/2 c Truvia brown sugar blend

-2 scoops Optimum Nutrition vanilla ice cream whey protein

Bake for 18-20 mins on 350 degrees Fahrenheit. Enjoy!
